Blackstone Zucchini

These can be made on Blackstone, Grill or in the kitchen. Adjusting seasoning to your taste is super easy!

  • Zucchini, washed and sliced long ways
  • Olive Oil, to Baste 1 tsp (more if used to prevent sticking)
  • Shaved Parmesan Cheese, 4 Tbsp (We use BelGioioso Shaved Cheese Blend)
  • Garlic Powder, 2 tsp
  • Black Pepper, 2 tsp
  • Basil, 2 tsp
  • Paprika, 1 tsp
  • Italian Seasoning, 1/4 tsp
  • Table Salt (Optional), 1/2 tsp

First make seasoning mix: Add all dry seasoning and mix together! (Cheese is not a seasoning and neither is Olive Oil!) After mixing together, throw it to the side. We will get back to it soon!

Wash Zucchini. Slice long ways. Not too thin and not too thick. I cut mine approx. 1/2″ thick. Don’t be cutting your fingers!!! Be careful!!

Use a brushing of Olive Oil or spray to prevent sticking. I usually put the real oil down. Place Zucchini meat side down. (That’s the white side) Cook at 375 degrees approx 5 mins. Flip Zucchini to skin side down. (That’s the green side!)

Baste with Olive Oil. Sprinkle seasoning mix over zucchini. Don’t hold back!! Add that seasoning!!!! Allow to cook until it reaches the desired point of “done”. I like things cooked a lil more than others. I would say probably 10 mins for most people! But don’t hold me to it!!

Once it has reached the right level of “done”, remove from grill. At table, sprinkle with Parmesan Cheese! Enjoy!
