Creamy Sweet Potato & Apple Bisque

Description

Great for those chilly winter nights when you need something warm and just a little sweet!

Ingredients
  • 3 Large Sweet Potatoes, peeled and diced
  • 3 Small Apples, peeled and diced
  • 1 Medium Yellow Onion, diced
  • 32 oz Vegetable Broth
  • 1 can Coconut Milk
  • 1 tsp Rice Vinegar
  • 3 tsp Minced Garlic
  • 1 1/2 tsp Smoked Paprika
  • 1 tsp Ginger
  • 1 tsp Black Pepper
  • 1/2 tsp Salt
  • Bread of choice
  • Cheese of choice
  • Fresh Basil
Instructions
  1. Peel and Dice sweet potatoes, Apples & Onion.
  2. Add to crockpot, along with Veggie broth.
  3. Cook on high 3 1/2 - 4 hours until soft.
    You may allow to cool some before the next part, if desired.
  4. Blend mix (I used my Vitamix Blender) with Coconut Milk. 

    You may need to do this in smaller batches depending on your equipment.
  5. Once blended place back in crockpot.
  6. Add dry seasonings and rice vinegar.
  7. To set flavors, allow to cook on low 30 mins or longer.
  8. Keep hot until time to serve.
Note

To serve with bread, top bread with cheese of choice and fresh basil. Toast bread to desired doneness. Dipping the bread in the bisque is crazy good!

Extra:

I used Gala Apples, however I don't think the apple type would matter much. Probably wouldn't use a sour/tart apple. For veggie broth, I use Edward & Sons Low Sodium. To make my broth, I mix one bouillon cube in 32 oz of water. We used GF Schar Sourdough Bread.
