Gluten Free Muffins

Description

This is Alex's favorite muffin recipe.  The great thing about this recipe is it can be used to make just about any kind of muffin.  Tonya loves them made with cinnamon chips or blueberries.  We also love them with chocolate chips!

Ingredients
  • 1 3/4 cup GF All Purpose Flour
  • 2 tbsp Baking Powder
  • 1/2 tsp Bakind Soda
  • 3/4 cup White Sugar
  • 3/4 cup Filling Item (Possible Fillings:Chocolate Chocolate Chip Muffins: 2 tbs Cocoa Powder, 3/4 cup Chocolate Chips. Cinnamon Muffins: 1 tbs Cinnamon, 3/4 cup Cinnamon Chips. Blueberry Muffins: 1 cup Fresh Blueberries.)
  • 1 cup Milk
  • 1/3 c & 2 tablespoons cup Canola Oil
  • 1 Egg
  • 1 tsp Vanilla Extract
Instructions
  1. Add the dry ingredients together in a large mixing bowl. Whisk to fully combine.
  2. Add your filling items to the mixed dry ingredients and mix together
  3. In a small bowl, add the wet ingredients and whisk together.
  4. Add the wet ingredients to the dry ingredients and mix with a large spoon. Make sure to leave it lumpy! Muffins should be lumpy!!
  5. Pour into muffins tins and bake!

    For a Conventional Oven, bake at 400 degrees for 20 minutes.

    For a Convection Oven, bake at 350 degrees for 30 minutes
