My favorite Sugar Cookie recipe! Easy to make, great for cutting into fun shapes. Works great with low cost gluten free flour from Walmart!

Ingredients
1cup Unsalted Butter (softned)
1/4cup Brown Sugar (packed)
3/4cup Granulated Sugar
1tbsp Pure Vanilla Extract
1/2tsp Pure Almond Extract (optional if you have it)
1 Egg
2 1/2cup Flour (Gluten Free) (I have been using Walmart's Great Value GF Flour (lowest price) and it has worked great!)
1 1/2tsp Baking Powder
1tsp Cinnamon
Instructions
In a large bowl, cream Butter, Brown Sugar, and Sugar with a mixer
Beat in the Egg, Vanilla Extract, and Almond Extract (if using)
In a medium bowl, add the Flour, Baking Powder, and Cinnamon and mix together with a whisk
Slowly pour the dry ingredients into the batter and mix until fully combined. It should come out soft like playdough.
Shape into two balls of equal size and wrap each with plastic wrap. Refrigerate for at least 1 hour
Pre-heat over to 375 degrees
Pull out one ball of dough from the fridge and roll out on floured surface to 1/4" thickness. Cut out and place on baking sheet. I like to use parchment paper on my baking sheet. Do the same with the second ball of dough
Bake for 10-12 minutes, depending on your oven, until the edges are lightly brown. You can go a little longer if you like your cookies crispier.
