Carrot Hot Dogs

Description

This recipe has been online everywhere! I'm not sure where it originated, therefore not sure who to give credit to for the original idea. I have changed things up to make it more to our liking. (no surprise there, huh?) Don't forget! Experimenting is part of the fun!

Ingredients
  • 6 or more Whole Carrots (Peeled and cut hot dog length. If the carrots are thicker than 3/4", I suggest splitting them in 1/2 length wise)
  • 1 cup Vegetable Broth
  • 1/4 cup Apple Cider Vinegar
  • 2 tbsp Mustard, Yellow (Some recipes call for Dijon, however I don't keep that on hand)
  • 2 tbsp CocoAminos (Most recipes call for Soy Sauce. Being GF & keeping lower sodium, I use CocoAminos)
  • 1 tsp Smoked Paprika
  • 1/2 tsp Liquid Smoke (I have used the regular smoke and also used the Mesquite Smoke. Both are delicious)
  • 6 Buns / Wraps / Lettuce (or throw them in a bowl with Chili to make a Chili Hot Dog Bowl!)
Instructions
  1. Whisk all ingredients together (except carrots and buns)
  2. Peel Carrots cutting into appropriate "hot dog" length. Allow to marinade minimum of 30 mins, up to 10 hours. (that's the longest I have marinaded these)
  3. Serve as you would a hot dog, being sure to add all the normal hot dog toppings. Ketchup, mustard, relish, onion, cheese, etc.

    ***These freeze well for quick meals!***
